It’s so easy to make the creamiest, tastiest Instant Pot Rice Pudding in your pressure cooker, it’s one of our favorite pressure cooker desserts to cook! And if you’re dairy free, no problem, we’ve got you covered as you can easily make this with non dairy milk.

Steps for Making Instant Pot Rice Pudding

Step 1 – Add the Arborio rice to your Instant Pot, don’t rinse it! we want the starch to create a thick pudding. Pour in one and a half cups of water and the salt.

Step 2 – Add the pressure cooker lid and make sure your turn the steam release vent to ‘sealing’ setting, (and check you have the sealing ring in!) Use the manual button or pressure cook button and set it to cook for4 minutes.

Step 3 – Whisk together the egg, your milk of choice, sugar, vanilla and stir it all together.

Step 4 – When the cook time time is finished let your pressure cooker reduce pressure on its own without opening the steam release vent(Natural Pressure Release) for about 10 minutes. Once that time has passed you can open then vent, then open the lid.

Step 5 – Turn on the saute function on your Instant Pot (it may have another name on different pressure cooker brands) and add the raisins, cinnamon, and milk and sugar mixture to the rice.

Step 6 – Give it all a good stir and let it cook until the mixture starts to simmer and cook for two to three minutes, and then turn off the saute function. You can serve it hot or cold, it will thicken more as it cools.

Instant Pot Rice Pudding FAQ’s

  • Best Rice to use? We prefer to use Arborio rice as its high starch content makes a creamier rice pudding, but you can use long grain rice if that’s what you have.
  • Can I make it Dairy Free? Yes! We love to make it with soy milk, or full fat canned coconut milk makes a really creamy rice pudding.
  • Hot or Cold? You can serve it however you prefer.
  • Will it thicken up? Yes, as it cools it will thicken. If it’s too thick for you after it’s cooled simply stir in a little more milk.
  • Can I reduce the sugar? Yes, you should feel free to adjust the sugar to your tastes.
  • How long will it keep? It will last three to four days in the fridge.

Ingredients

  • 1cupshort grain rice (Arborio), 200g
  • 1.5cupswater, 355mls
  • 1/4teaspoonsalt

Instant Pot Rice Pudding Sauce

  • 1largeegg, beaten
  • 2cupsmilk, 500 mls
  • 1/2cupsugar, 100g
  • 1tspvanilla extract
  • 1/2tspground cinnamon, optional
  • 3/4cupraisins

Instructions

  1. Add un-rinsed Arborio rice to your Instant Pot (or any brand of pressure cooker) along with 1.5 cups water and the salt. See recipe notes for cooking instructions for other types of rice.

  2. Lock the lid, turn the steam release vent to 'sealing' and using the manual setting, adjust it to cook for4 minutesat High Pressure.

  3. Whisk the egg and add the milk, sugar, vanilla and mix well to combine.

  4. When the cook time time is complete allow the unit to reduce pressure on its own without opening the steam release vent(Natural Pressure Release) for about 10 minutes, then carefully release the rest of the pressure by opening the vent before opening the lid.

  5. Turn on the saute function on your pressure cooker and add the raisins, cinnamon, and milk mixture to the cooked rice.

  6. Stir well and cook for two to three minutes, and then turn off the saute function.

  7. You can serve it hot right away or cool and keep for later, it will thicken up more once it cools down.

Recipe Notes

Types of Rice – works best with short grain rice such as Arborio as it’s higher in starch than other varieties and is perfect for this recipe . You can use other varieties but they may not thicken up quite as much. Please note that for Jasmine and Basmati rice use only 1 cup/250mls water, this is less than you’ll need for Arborio.

Milk – You can use any milk you prefer including non dairy, but some milks will give ‘creamier’ results than others.

    Lived this recipe. I used 1 cup 2% milk and 1 cup heavy whipping cream. So rich and delicious. You did not specify how much cinnamon. I used 1 teaspoon and thought it was perfect. My husband thought it was too much. How much cinnamon do you recommend?

      Hi, that was an error I missed the measurement. The cinnamon is optional but I’d start with a 1/2 tsp.
